Crab Stuffed Mushrooms

1 pkg - Spicy Chicks dry dip mix (options on grocery list, below)
4oz - Cream Cheese (softened) ( ½ of an 8oz box)
1/3 cup - Sour Cream
1/3 cup - Mayonnaise
Crab stuffed mushrooms ¼ cup - Diced bell pepper
¼ cup - Diced onion
1 pkg - 12oz Imitation Crab Meat
4 pkgs - Button Mushrooms
(cleaned & stems removed)
¼ cup - Parmesan Cheese
¼ cup - Bread Crumbs

1- Place Ingredients above dotted line in a food processor & Pulse
    until very finely diced
2- Stuff mushroom caps with crab mixture
3- Mix Parmesan Cheese & Bread Crumbs together & sprinkle on
    stuffed mushrooms
4- Bake at 400˚ for 25 minutes

-Cover pan with Aluminum Foil for easier clean up
-If you don’t want to stuff 4 packs of mushroom, use the extra crab mixture to spread on crackers for a great TV snack

Corn Muffins

1 - pkg Spicy Chicks dry dip mix (options on grocery list, below)
1 - 8.5oz box of corn muffin mix
1 - 8oz container Sour Cream
Corn muffins 1/3 cup - Milk
1 - egg
1 - cup grated cheese (split in half)
Pinch of salt

1- Place ALL Ingredients (reserving ½ cup of cheese) in a bowl & Mix
until well blended
2- Grease a muffin pan with nonstick spray
3- Fill muffin cups half way with mixture (yield 12-15 muffins)
4- Top with reserved ½ cup of grated cheese
5- Bake at 450˚ for 10-12 minutes


Slice length wise, add some deli meat and cheese to make a snack sandwich or littlebit for your next party.

Main Dishes

Stuffed Shells

1 - pkg Spicy Chicks dry dip mix (options on grocery list, below)
1 - 16oz container of Cottage Cheese
1 - 32oz container of Ricotta Cheese
Stuffed Shells 1 - Onion -- Diced
1 - 8oz pkg of Mushrooms -- sliced
2-3 Garlic Cloves -- Minced
1 - Box Pasta Shells 
1 - Jar of Pasta Sauce

1- Bring a pot of Water to a Boil and Cook the box of Shells
2- In a sauté pan, sauté the onion, mushrooms and garlic till tender 
3- In a large bowl, combine the Cottage Cheese, Ricotta Cheese,
cooked onion & mushroom mixture & pkg of SC Garden Spinach 
4- Stuff the cooked pasta shells with the cheese mixture
5- Place stuffed shells in a baking dish & Top with pasta sauce
6- Cover dish with foil and Bake at 350˚ for 30 minutes

Stuffed Peppers

1 - pkg Spicy Chicks dry dip mix
Stuffed Peppers (options on grocery list, below)
1 - pkg Ground Beef (1 pound)
2 - cups Cooked Rice
1 - 8oz can Diced Tomatoes
½ - an Onion -- Diced
3 - Cloves of Garlic -- Minced
3 to 4 - Bell Peppers for Stuffing
Salt & Pepper to taste
Shredded Cheese to top peppers

1- Cook Rice according to package directions
2- In a sauté pan, sauté the onion & garlic for 3-5 minutes
3- Add the ground meat to the onions & garlic, season well with salt
and pepper
4- Drain the can of Diced Tomatoes & Add to the cooked Meat
5- Add Spicy Chicks Mardi Gras Cajun seasoning & the Cooked Rice to
the Meat mixture
6- Cut the Bell Peppers in Half & clean out the seeds and ribs
7- Stuff the Peppers with the Ground Beef Mixture
8- Top the Stuffed Peppers with some Shredded Cheese
9- Bake at 350˚ for 30 minutes or until the peppers are soft
